Here are a few last-minute Holiday recipe ideas you can make with simple, organic pantry staples:

 

1. Festive Holiday Quinoa Salad

Ingredients

  • 1 cup organic quinoa

  • 2 cups water

  • ½ cup dried cranberries

  • ½ cup chopped walnuts

  • 2 tbsp olive oil

  • 1 tbsp lemon juice or apple cider vinegar

  • Salt & pepper to taste

  • Optional: parsley or green onion

Simple Instructions

  1. Rinse quinoa and cook with water (bring to boil, simmer 12–15 min).

  2. Let cool slightly.

  3. Toss quinoa with cranberries, walnuts, olive oil, lemon juice, salt & pepper.

  4. Top with herbs if using. Serve warm or cold.

2. Almond & Walnut Cookies (Simple Version)

Ingredients

  • 1½ cups ground almonds or walnuts (or mix)

  • ¼ cup maple syrup or honey

  • 1 egg

  • ½ tsp vanilla extract

  • Pinch of salt

Simple Instructions

  1. Preheat oven to 350°F.

  2. Mix all ingredients in a bowl.

  3. Scoop tablespoon-sized dough balls onto lined baking sheet.

  4. Flatten slightly.

  5. Bake 10–12 minutes until lightly golden.

  6. Cool before serving.

3. Roasted Holiday Nuts

Ingredients

  • 3 cups raw organic almonds, walnuts, pecans, or cashews

  • 1½ tbsp olive oil

  • ½ tsp sea salt

Simple Instructions

  1. Preheat oven to 325°F.

  2. Toss nuts with olive oil, salt, and seasoning.

  3. Spread on baking sheet in one layer.

  4. Roast 12–18 minutes, stirring once.

  5. Cool completely (they crisp as they cool).

Ingredients

  • 2 cups cooked organic kidney or garbanzo beans (or 1 can, drained)

  • Salt & pepper to taste

  • Optional: splash of lemon juice

Simple Instructions

  1. Heat olive oil in pan over medium heat.

  2. Add garlic and sauté 30 seconds.

  3. Add beans and herbs.

  4. Warm through (5–7 minutes).

  5. Season with salt, pepper, and lemon if desired.
