You’ve probably twisted a pepper grinder countless times without thinking much about where those little black peppercorns actually come from.

But before they reach your pantry, peppercorns look surprisingly different.

They grow in clusters of small fruits on a climbing vine!

So, What Is a Peppercorn?

Black pepper comes from a flowering vine called Piper nigrum.

The vine produces clusters of small, round fruits. These fruits are often called pepper berries or peppercorns, and they start out green as they develop on the plant.

Once harvested and processed, those little fruits eventually become the wrinkled black peppercorns you recognize in your kitchen.

 

Have You Ever Seen Black Pepper Growing?

If you’re picturing little black peppercorns hanging from a plant, think again.

Black pepper grows on climbing vines, and its fruits develop together on long, dangling clusters called spikes.

Before processing, the clusters can look more like bunches of tiny green berries than the black pepper sitting on your spice rack.

It’s quite a transformation!

 

One More Interesting Black Pepper Fact

Here’s where it gets even more surprising:

Black, green, and white pepper can all come from the same plant.

The difference comes largely from when the pepper fruits are harvested and how they're processed afterward.

For black pepper, the fruits are generally picked while still green and then dried. As they dry, the outer portion darkens and wrinkles, creating the familiar black peppercorn.

Green peppercorns are harvested while immature and processed in ways that preserve more of their green color.

White pepper is generally produced from fully ripened pepper fruits with the outer portion removed, leaving the lighter-colored seed behind.

So the next time you reach for the pepper grinder, remember:

Those little black peppercorns started out as small fruits growing together on a tropical climbing vine. 🌿
