Why This Recipe Works

  • Naturally sweetened with Organic Dates
  • Made with Organic Rolled Oats for fiber and heartiness
  • Powered by Organic Almonds or Almond Butter
  • Can be customized with chocolate chips, coconut, or seeds
  • Soft-baked texture

Ingredients:

  • 1 cup pitted Organic Dates (Thoory or Medjool work well)
  • 1 cup Organic Rolled Oats
  • 1/2 cup Organic Almonds (or 1/3 cup almond butter)
  • 1 tbsp Organic Coconut Oil (or olive oil)
  • 2 tbsp Organic Maple Granules or Coconut Sugar (optional, for extra sweetness)
  • 1 tsp Organic Vanilla Extract
  • 1/2 tsp Organic Cinnamon
  • Pinch of sea salt
  • 2–3 tbsp water (as needed)

Optional Add-ins: chopped dark chocolate, shredded coconut, chia seeds, or raisins

Instructions:

  1. Soften the Dates
Soak the pitted dates in warm water for 5–10 minutes if they feel dry. Drain well.
  2. Blend the Base
In a food processor, pulse the oats and almonds until coarsely ground. Add dates, coconut oil, maple granules, vanilla, cinnamon, and a pinch of salt. Blend until a thick dough forms. Add a splash of water if needed to help it come together.
  3. Shape the Cookies
Scoop out heaping tablespoons of dough and form into balls. Flatten slightly on a parchment-lined baking sheet.
  4. Bake
Bake at 350°F (175°C) for 10–12 minutes, or until edges are golden and centers are soft but set.
  5. Cool and Store
Let cool on the pan for 10 minutes. Store in an airtight glass container for up to a week.

Tips & Variations

  • Use almond butter instead of whole almonds for a smoother texture
  • Add dark chocolate chunks for a more indulgent treat
  • Roll in shredded coconut before baking for a fun twist
  • Freeze for up to 2 months for easy snack prep
